Temperature control is a very big engineering field.But unless u are specific it is difficult to answer. Controlling the room temperature or steam temperature or a satellite temperature

An electronic control device made of a diode temperature sensor, opamp and relay
above are all on/off controls. The heater is turned off when it reaches the set point, then turned off when it cools below the set point. It continues to cycle on and off to keep the temperature near the set point.
The latter two types can also be used in proportional controls, where the amount of heat is controlled via a feedback loop and a high power linear controller of some sort so that when the set point is approached, the power to the heater is reduced, and the loop adjusts the power level to just maintain the required temperature.

I assume you are talking about control algorithms, not heating or sensing mechanisms.
