the only way you can control the temperature is to control the amount of fuel or the amount of air that gets to it, use a chimmy pipe dug into the ground and cover so much of the pipe to control the air flow, when its under the ground it'll also kool the airI want to create a bbq in my garden dig down and line with bricks how do i control the temperature?

I would suggest you keep well away from cooking. You sound like a nightmare waiting to happen.
Temp controlled by Oxygen / air allowed to get to fuel.
Open pit, by amount of fuel used, keep spread out or raise GRILL higher above fire / coals.
Spread out, fuel will burn faster, so must keep ready supply for long cooking.
Grill scaped clean after heating, wire brush good. wipe cooking oil on grill before / during / between cooking. May use foil under meats to prevent direct flame burn.
After grill cools, clean, spray cooking oil / wipe cooking oil on grill, AND WRAP in foil for future use.
Figure out how you will remove ash without dragging across patio area.
adding or removing coals controls temp as does moving the food to the outside edges, away from the concentrated heat source, the bricks will retain heat, keeping the cooked food warm without further cooking/scorching
